More than 60 million tons of tomatoes are produced each year, making them the most cultivated fruit in the world. This fact often surprises people, as tomatoes are commonly used in savory dishes, leading many to categorize them as vegetables. This week's recipe is "Hearty Heirloom Tomato and Basil Pasta”.

Indulge in the fresh flavors of your garden with this simple yet delicious pasta dish, highlighting the rich taste of heirloom tomatoes and the aromatic freshness of basil.

Ingredients:

  • 2 cups of heirloom tomatoes, chopped (Brandywine or any variety you prefer)

  • 1 cup of fresh basil leaves, torn

  • 3 cloves of garlic, minced

  • 1/4 cup of extra virgin olive oil

  • Salt and freshly ground black pepper, to taste

  • 1/2 teaspoon of red pepper flakes (optional for a spicy kick)

  • 400g (14 oz) of your favorite pasta (spaghetti or penne works great)

  • Grated Parmesan cheese, for serving

Instructions:

  1. Prepare the Pasta: Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a cup of the pasta water.

  2. Make the Tomato-Basil Mixture: In a large bowl, combine the chopped heirloom tomatoes, torn basil leaves, minced garlic, olive oil, salt, pepper, and red pepper flakes if using. Let the mixture sit for about 10 minutes to allow the flavors to meld.

  3. Combine: Add the cooked pasta to the tomato-basil mixture. Toss gently to combine. If the pasta seems dry, add a little of the reserved pasta water to achieve the desired consistency.

  4. Serve: Serve the pasta in bowls, topped with a generous sprinkle of grated Parmesan cheese.
